The Hui nationality, a resident minority in Mangbang Town, Tengchong City, has long formed its unique Halal food culture. One of the most representatives is the wax goose. Hui people have always been good at raising geese. Almost every family has the tradition of raising geese, with as few as three or five or more than a hundred. Wax goose made by Hui nationality is popular for its beautiful appearance, unique production technology, delicious taste and crisp fragrance. When the goose is grown, remove its hair and internal organs, then cut it open and flatten it down the middle of its belly. Wash and dry them repeatedly, rub them with salt, and marinate them in a container for 3 to 4 days. It is then left to dry in the warm winter sun for a few days until the fat begins to seep out and fall off. After cooking waxed goose, people especially like to eat waxed goose oil bibimbap, has become one of the rare delicacies.
